Mediterranean Lunch
I've been doing a lot of thinking lately about improving my health more, trying to kick a couple more bad habits, and just generally living the best life possible.
And one thing I feel really positive about is taking on a more Mediterranean way of eating. With all the proven health benefits, incorporation of all food groups and the flexibility it provides I'm definitely game for this!!!
So I spent some time researching recipes, ordered a cookbook but decided I couldn't wait so knocked myself up this absolutely delicious lunch using the Med approach.

I cannot tell you how tasty and satisfying it was, so here's the recipe for you to try it yourself.
1 tin of tuna (I usually buy it in spring water)
1 handful of whole wheat pasta
Quarter of a small red onion
1 tomato - core and seeds removed
2 tbsp olive oil
2 tsp parsley
Sprinkling of low fat cheddar cheese
Chuck the pasta on the hob and while it's cooking, finely chop your onion and tomato. Mix all your ingredients in a bowl, then when the pasta is ready add that in and sprinkle cheese on top.
Give it all another mix and thank me later đ
Obviously you can adapt this to suit your tastes but this was absolutely gorgeous. So I recommend giving it a try, and let me know in the comments what you think!
